Why is my Kenmore gas range not holding temperature?

My Kenmore gas range model 362.75321002 will not hold temperature, gets up to 400 then drops to 200.

On something like this I suspect the temp sensor or the EOC, electronic oven control. You will need a meter to check the resistance of the sensor. At room temp the sensor should ohm out at 1100 ohms. If the temp sensor checks good I recommend replacing the EOC.
