`The rule of thumb when buying ribs is to allow a minimum of a pound per person. Spare ribs come from the belly side of the hog, have the least amount of meat and are the least tender. Back ribs are from the blade and center section of the loin they are meatier and easier to handle. Allow one pound per person. Country style ribs cut from the rib end of the loin are the meatiest. For these ribs which actually require a knife and for to eat, allow a half pound per person.
