Taking care of things around the house before going on vacation is a great idea and for piece of mind. To get the best possible answer to your specific question please submit the brand and model number to the water softener. Below is a link with a diagram on other water softeners on how to set it on vacation mode. It may help while waiting for an expert response.
I can understand how important it is to have the water softener off while you are away. You do not need to turn off the water, just unplug the softener. This will keep it from regenerating. You can also open the bypass valve, which will allow water into the home, but it won't be going through the softener. If you need further assistance, please reply with your model number to this thread. Thank you for using Manage My Life.

Follow the hoses back from the water softener to where the hoses join the copper pipes. Here you will find 3 isolation valves, known collectively as the bypass set. They may be white 1/4 turn plastic type valves that are marked with an arrow showing which direction to turn it for SOFT water. Turn all three 1/4 white plastic valves in the opposite direction of the SOFT arrow. When all three valves are turned in the opposite direction to the SOFT arrow, your machine will be isolated from the water supply and ordinary hard water will continue to flow to the property.
