Mole poblano is a rich complex sauce thickened with ground seeds and nuts. Mole begins with ancho chilies which are quick fried in lard, drained and soaked in water. In addition plantain, raisins and apricots are fried in lard. Tomatoes, onions and garlic are broiled and cooled. The fruit, vegetables and peppers are all pureed in the food processor. In addition coriander seeds peanuts sesame seed, pumpkin seed and Mexican chocolate are ground and blended into the sauce. All of this is combined and thinned with chicken or vegetable stock to create a mole.
